Manchego cheese is a Spanish cheese made from sheep's milk and protected by an appellation of origin in La Mancha. Has recognized the PDO at European level by Regulation (EC) 1107/96 European Commission. The area covered by the designation of origin 'Queso Manchego' is 4,419,763 hectares, in a series demunicipios covering parts of the provinces of Albacete (21.66% of the region), Ciudad Real (33.16%), Cuenca (22.13%) yToledo (23.05%), which constitute the region of La Mancha.

    History

 

Since ancient times the inhabitants of La Mancha were engaged in herding and cheese making, as did all primitive peoples. Proof of this are the remains of bowls, punch bowls, cheese and other items found in the museums of the four provinces of La Mancha.

Manchego cheese featured in some quotes from historical and literary documents, as well, in Cervantes' Don Quixote cheese with La Mancha is clearly linked. In 1878, in the work of Primo entitled Balanguer and exploitation and production of milk, butter and cheese from different classes, one chapter devoted to the 'main Spanish cheese "Referring first to manchego cheese is made.

In 1892, in the General Dictionary of the kitchen, Angel Wall, relates the milk Spanish cheese Manchego sheep. The author speaks of Manchego cheese in The Practicón, kitchen complete treatise published in 1898. In 1909 the book entitled Making deBuenaventura Arago cheeses and butters of all kinds, appointment of its pages manchego cheese, also appearing in the Spanish eat good guide, Dionisio Perez, published in 1929.

This name was recognized provisionally by the Order of July 2, 1982 the Ministry of Agriculture, Fisheries and Food. It was recognized as a PDO by Regulation (EC) No 1107/96 European Commission. Currently (2007-2008) is in the process of modifying some aspects of the specification for the PDO.
